Job Description:
This is a full-time, 10-month (August-May), professional position overseeing the operations of three kitchen spaces including storage areas on multiple floors, management of wine and beer inventories and sundry items necessary to execute courses (5-7 sections/semester). This position hires, schedules, and supervises multiple student workers and is responsible for the overall operation and management of the Falk kitchens. The Culinary Operations Manager is also responsible for paying invoices and budget resolution.

Responsibilities:
- Hires (and fires), schedules and trains (as it relates to soft skills of a job) student lab assistants working with the instructors to best fit the needs of each course.
- Manages the student kitchen manager and delegate tasks as appropriate for the food preparation and faculty support for culinary and beverage courses.
- Manages upwards of 56 student shifts throughout the semester in support of culinary and beverage courses.
- Develops and implements a course fee budget for the FST/NSD classes
- Collaborating with the purchaser to maintain food costs relevant to each course and the associated course fees.
- Supporting the purchasing function by reviewing standard purchase specifications; standard recipes; standard yields; standard portion sizes and costs as they pertain to each course.
- Understanding the relationship between standardizing recipes; portion and yield tests; yield and cost calculations; cost and price course offerings as well as reviewing overall costs associated with FST and NSD classes is necessary.
- Supporting the purchaser and relations with all vendors in and outside of the university to achieve effective accountability for costs and sourcing of products.
- Keeps current with the Higher Education Permit with the NYS Liquor Authority for proper licensing to taste alcohol in wine and beer courses.
- Oversees the operation and maintenance of the EFL, Commercial kitchen and dining room, ACE Center, wine & beer room and other storage areas directly related to culinary and beverage courses.
- Proper equipment and maintenance of equipment requires detailed attention to regular cleanings. Maintains small ware inventory and sanitation/cleaning supplies for kitchens and ACE demo kitchen.
- Ensures proper storage of chemicals and ingredients. Manages corrective preventive maintenance needs, ensuring a safe and healthy work environment by enforcement of OSHA regulations and university policies.
- Maintains regular sanitation audits and regulatory requirements through detailed record keeping.
- Understanding that food safety and sanitation is paramount to the success of our program this position requires ServSafe manager certification (or equivalent) as oversight and proper training of all lab assistants is critical.
- The uniqueness of all the culinary spaces in Falk College of Sport set us apart in and outside of the university community. To this end, many requests are made for use of these spaces.
- The culinary operations manager is responsible to work with parties seeking use of our space to the capacity that is available. This includes generation of quotes for the space in conjunction with Falk budget office, scheduling space and support staff, collaborating with purchasing needs, and working with academic units to support their success.
